Pineapple Syrup/Jam/Topping
2 cups diced fresh pineapple
1 cup sugar
1 can pineapple juice (6 oz.)
Combine all three ingredients in a medium saucepan. Bring to a boil over medium heat. Stir regularly. Continue cooking until sauce has reached desired consistency. Cool.
This makes excellent topping for ice cream, pancakes, and waffles.
